Sugar Donut Muffins ! YUMMY!







3/4 cup sugar
1 large egg
1 1/2 cup of all purpose flour
2 tsp baking powder
1/4 tsp salt
1/2 tsp cinnamon
1/4 cup vegatable oil
3/4 cup milk (any except buttermilk)
1 tsp vanilla


Preheat oven to 350F. Lightly grease muffin pans with cooking spray or oil.


In your mixer, mix sugar and egg till light in color, combined flour, baking powder,cinnamon,salt in separate bowl. Pour into egg, and sugar mixture, and add oil, milk, and vanilla.
mix together well, and add to muffin pans 3/4 full. Bake 15-18 min .

you can fill these with a fruit filling or nutella works really well. do this with a cupcake filling compress or a pastry bag.

these are a great treat for your family, and to share with friends!

Lemony Coconut Gooey Marshmellow Bars



1 box Lemon cake mix
1 large egg
1 stick (1/2 cup) unsalted butter, softened
4 1/2 full coconut lime cookies
10 ounce bag white chocolate chips
1 1/2 cups mini marshmallows
1/2 cup toasted coconut marshmallows
1/2 cup sweetened condensed milk


1. Preheat oven to 350 degrees F. and line an 8×8 inch baking pan with tin foil that’s been generously sprayed with cooking spray. Make sure foil goes all the way up and over the edges for this one. It will be a full pan 
2. Place cake mix, egg, and butter into a large mixing bowl. Mix with hands until a nice dough forms. similar to a cookie dough. Press half of the dough into the bottom of the prepared pan. Layer with cookies, white chips then marshmallows. Top with remaining half of dough pressing evenly. Drizzle sweetened condensed milk over top then bake for 28-33 minutes, until cooked through and golden brown on top. Remove from oven. Let cool for 5 minutes then take a plastic knife and run along edges to loosen marshmallow (this will make your life easier when pulling foil out of pan to remove bars Let cool completely then remove bars from pan with foil edges. Cut off all edges if desired, about 1/2 inch each side. I save the edges to snack on too. Cut bars into squares and serve. They are delicious room temperature or chilled.
12 to 16 servings

Pepperoni Pizza Loaf



1 cup all-purpose flour
1 1/2 teaspoons baking powder
1/4 teaspoon baking soda
1/2 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
2 large eggs
2 tablespoons extra virgin olive oil
3/4 cup buttermilk
1/4 cup shredded Parmesan cheese
1 1/2 cups shredded Mozzarella cheese
1 cup quartered pepperoni slices, about 32 slices
1/2 cup marinara sauce
1 teaspoon Italian Seasoning
1/4 cup shredded Parmesan Cheese


 Preheat oven to 350 degrees F. and spray small bread pan with non-stick cooking spray.


  Place flour, baking powder, baking soda, salt and pepper into the bowl of a stand or electric mixer, mix to combine.  Slowly add in eggs, oil, buttermilk, Parmesan, Mozzarella and pepperoni until just combined.  Pour half of batter into prepared bread pan that measures 9x5x2 3/4-inches.  Top evenly with marinara sauce then pour remaining batter over sauce.  Top with Italian seasoning and additional Parmesan cheese.  Bake for 45-55 minutes or until toothpick comes clean from center.  Let cool for 30 minutes before removing from pan.  Slice and serve warm or room temperature.
Makes 8 servings

This is a great appetizer if you have some last min guests coming, or a late night movie snack.Kids, and parents love it!

Chocolate chip Ice cream cookies






2 sticks softened butter
1 Cup granulated sugar
3/4 Cup packed brown sugar
2 large eggs
1 1/2 Tablespoons pure vanilla
Heaping 1/2 Cup vanilla ice cream (frozen from container)
4 Cups all purpose flour
1 1/2 teaspoons baking soda
1 teaspoon salt
1 bag chocolate chips


1. Preheat oven to 350 degrees F. In a stand or electric mixer, cream the butter and sugars until fluffy. Add in eggs and vanilla until well combined. Add in ice cream until combined.
2. Place flour, baking soda and salt into a large bowl; mix. Add to wet ingredients along with the chocolate chips; mix until just combined. With a medium cookie scoop, scoop dough onto a silpat or parchment lined baking sheet. Bake for 9-11 minutes or until cookies are cooked through. Let cool for 5 minutes on baking sheet before transferring to a cooling rack. Serve with a marashino cherry on top
3-4 dozen cookies


These are a great sweet summer treat, especially served warm with a little of your favorite flavour of ice cream in a bowl! YUM :)

Zeke's First Birthday!

Well we had zeke's first birthday on July 6th,with 2 party's for the little stinker. One with grandparents and then one with family and friends, he had so much fun and had WAY too much sugar. He was up alot that night after all the sweets he encountered. LOL...

I created this little candy bar for everyone to enjoy.. the kids enjoy'd it the most though. I think I had more fun making it then they had eating it. I was really happy with the turn out and am hoping to do it again for another birthday party of his somewhere along the road. I made both of his cakes( will post below) I got really creative and had so much fun. One day he will look back and see how much fun it was to make as it was to eat and wear on his face. he loved his cakes and actually took his first 2 steps on saturday night.. it was so exciting I was screaming like a mental patient. I had to convince Travis to let me buy this bouncy castle at toys r us.. and it was the best thing ever to keep the kids busy and having fun so mommies and daddies could chat and have a good time.

I still havent come to terms with the fact that he is 1... seems like just last week he came home and was my crazy baby who never slept. As hard as it was I wouldnt take any of it back.. he is my little sunshine in the morning and my little helper during every day. He recently has been loving giving us our household items... such as the remotes, toys,pillows, blankets.. ect.. he gets pretty pleased with himself when we tell him "thank you" he is the funniest kid.
This was the 2nd cake I made, just a rainbow cake with chocolate icing and fondant dots and pearls.Took me a while cause I had to dye the fondant. MESSSSYYY! I had blue and teal fingers for a week! well worth it though....
Zeke got so many great presents, trucks, cars,clothes, and books! I dont have to get him anything till Christmas!.. he is in love with wheels so eveyone pretty much gave him stuff with those.. loves all of them and stays busy ALL day!! I LOVE IT!

Baked Mediterranean Salmon Fillets

Well I have been very busy now that the nice weather is here, zeke and I have been going on a daily outing around his napping schedule.:) His big day is almost here.. and I will be making a big post about it after July 16th!

I made this great dish for him today, (and of course travis) ! I have been trying to make meals that he can eat aswell as us.. given he is almost 12 months he still can't just eat ANYTHING.. but I have this great recipe and he thought it was great.. he ate it all up with out a fuss.





Preheat over 400 F(200 C)
8" baking sheet or glass baking pan (i use purex)

1lb (4approx)     Salmon Fillets (frozen or fresh) 
1/4 tsp                dried oregano
1/4 tsp                dried thyme
1/2                      lemon ( thinly sliced)
1                         lg tomato, sliced
1/2                      green bell pepper, diced
1/4 cup               finely chopped onion
1/2 cup               chicken stock
1 tbsp                 lemon juice

*fresh chopped parsley is optional


1. arrange fish fillets in prepared baking pan. Sprinkle  with oregano and thyme. Place lemon and tomato slices,green pepper, and onion over fish.

2. In a small bowl, combine chicken stock and lemon juice; pour over vegetables and fish. Cover and bake in preheated oven for 20 min or until fish flakes easily with a fork at its thickest part. Garnish with parsley before serving with you chose to use it.

This is a great meal for your child its full of Omega 3's and high protein content.

Breakdown: 238 cals, 28g protein, 5g carbs, 19mg of calcium

 Peanut Butter Cookie Centers
1 cup creamy peanut butter
1/2 cup granulated sugar
1 egg
____
2 sticks softened butter
1 cup granulated sugar
3/4 cup packed light brown sugar
2 large eggs
1 tablespoon pure vanilla extract1 3/4 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon kosher salt
1 1/2 cups chocolate chips, I used semi-sweet
1 cup cocoa powder


1. Preheat oven to 350 degrees F. and line a large baking sheet with parchment paper or a silpat liner.
2. Place peanut butter and sugar into a medium bowl, mix to combine then add egg, mixing until well combined. Set aside.
3. In a stand or electric mixer, beat butter and sugars until well combined. Add eggs and vanilla, beating until well combined.
4. Place flour, baking soda, and salt into a large bowl. Add to wet ingredients along with cocoa powder, and chocolate chips, slowly mixing until just combined. With a small cookie scoop, scoop peanut butter cookie dough into your hand. With a medium cookie scoop, scoop chocolate dough on top and on bottom of peanut butter dough.  With hands, press chocolate dough around peanut butter dough, forming into a cookie shape.  Place onto prepared baking sheet, about 1 inch apart from each other. Bake for 14 to 16 minutes, until cooked through. Let cool on baking sheet for 5 minutes before transferring to a cooling rack. Serve with milk.
Makes 3 dozen cookies
